ICYMI: Food Services celebrates Black History Month

In celebration of the great culinary influences of the Black community within the Canadian food landscape, and to mark Black History Month, two of our well-known and well-loved Black campus chefs shared several traditional recipes with us. Their dishes give us a great overview of the culinary traditions of two different Black communities: Jamaica and Ghana.

Chef Colin Wright walked us through his Jamaican Jerk Chicken with Rice and Peas and Fried Plantain, and Chef Daniel Ofori prepared his Ghana Red Red (a dish made up of Vegan Jollof Rice and Red Red). These recipes were specially chosen because they remind them of the flavours of home, are easy and economical to make, and are a delight for the senses.
